GARDEN STYLE TURKEY LOAF (Yields: 9 slices)
10 oz. fresh spinach, chopped
1 ½ lbs. ground turkey breast
1 cup oats (quick or old fashioned)
½ cup finely chopped onion
½ cup shredded carrots
1 egg, lightly beaten
1 ½ tsps. Italian Seasoning
¼ tsp. each salt and pepper
Worcestershire Sauce for flavor (optional – I like it)
About 1 cup, more or less, tomato sauce
Heat oven to 350 degrees F. Place spinach 3 mins. in microwave on high power. Squeeze dry. Combine spinach, turkey, oats, onion, carrots, slightly beaten egg, Italian Seasoning, salt and pepper and Worcestershire Sauce. Mix well.
Place mixture in 9 x 5” loaf. Bake for 40 mins., then add on top the tomato sauce for about a total of 1 hour baking time (until internal temperature reaches 170 degrees F and center is no longer pink. It might take less time in your oven.
Allow to cool a few minutes before slicing. (I have also added some shredded zucchini to provide more moisture and taste.)
