London Broil

Marinated London Broil

London broil is a beef dish made by broiling marinated beef, then cutting it across the grain into thin strips. Despite its name, the dish and the terminology are North American, not British.

Ingredients
  

  • 1 whole jalapeno pepper seeded
  • 3 cloves garlic
  • 1 cup teriyaki sauce
  • 1/4 cup sesame oil optional, and essential for the special taste
  • 1 cup worcestershire sauce
  • 3.5 lbs london broil preferably all red meat, no marbling

Instructions
 

  • Add  chopped jalapeno pepper, and crushed 3 cloves of garlic, and 1 cup of teriyaki sauce, and 1/4 cup sesame oil, and 1 cup Worcestershire sauce to a 9x13 pan. mix and add London broil. I marinate for 2-3 days, and turn over every 12 hours.
  • Place London broil on white hot grill, and cook for 4-5 minutes on each side, flipping the steak 4 times. (Cooking time will vary with thickness of the steak.)
  • Let steak rest for about 10 minutes before thinly slicing against the grain of the meat and on a bias. Will have wide and thin slices. May garnish with Cilantro if you like it.
  • The original recipe called for 1 cup tequila and only 1/4 cup Worcestershire sauce. (We happen to like Worcestershire sauce.)

Notes

Palm size portions of meat are best. Remember when you are eating, the more protein you eat, the more vegetables you need for great balance and digestion. Of course you can adjust, and evaluate when you are eating too much and gaining weight. If you have found your best weight, try to reduce and eat for maintenance.
Vegetables are Broccoli, a romaine salad with artichokes, Green beans, and peas, and of course roasted Asparagus. Roll asparagus stems in olive oil, and roast at 450 or saute asparagus in a little olive oil, in a skillet, and then add chicken stock to cover and boil for about 15 minutes.
